CHOPPED SPRING FRUIT SALAD

Sometimes you want more from your salad than lettuce, tomato and cucumber. So take your salad to new heights with this mix of citrus, avocado, Greek yogurt and pistachio topped with fresh tarragon.
1Place the chopped citrus fruit and pomegranate seeds into a large salad bowl.
2In a small bowl, add the fruit juice followed by the chopped avocado pieces.
3Carefully spoon over the juice to cover the avocado to prevent it from discoloring.
4Add the avocado and the crushed pistachio to the citrus fruit.
5Whisk together the yogurt and chopped tarragon leaves.
6Serve separately or drizzle the yogurt dressing over the citrus salad and serve.
