Red Pepper Hummus Pita

1In a food processor or blender, combine chickpeas, lemon juice, oil, and garlic; process 1-2 minutes or until smooth. Add roasted red pepper; process 30-60 seconds or until peppers are finely chopped.

2To make sandwich, place lettuce and cucumber slices in each pita bread half. Spoon about 3 tablespoons hummus in each.

1 (15oz) can Progresso Chickpeas, drained and rinsed

1 Tablespoon of lemon juice

1 tablespoon olive oil

2 garlic cloves, chopped

½ cup drained roasted red bell pepper

½ tsp of salt


8 lettuce leaves

1 cucumber, thinly sliced

4 (6 in) whole wheat pita (pocket) breads
