Lemon Basil Orzo Salad

1Cook orzo according to package.

2Zest and juice 2 large lemons.

3Combine ingredients and toss with 1/2 cup olive oil.

Orzo, 2 cups dry

Lemon, 2

Roasted red peppers, 1 cup chopped

Yellow grape tomatoes, 1 pint halved and roasted (optional)

Green onions, 1/2 cup chopped

Parsley, 1/2 cup chopped

Fresh basil, chopped
